Hearty Stuffed Peppers – Air Fryer Edition

Ingredients
- 1 tbsp olive oil
- 1 onion, finely chopped
- 500g turkey mince
- 1 clove garlic, minced
- 200ml tomato sauce (passata)
- 1 tsp parsley, chopped (plus extra for garnish)
- 3 tbsp grated Parmigiano Reggiano
- 6 bell peppers, tops cut off and seeds removed
- 100g Gouda or Cheddar cheese
- 160g cooked couscous (or substitute with rice)
- Salt and pepper, to taste
Method
- Heat the olive oil in a pan over medium heat. Sauté the onion until soft and translucent (about 3-4 minutes). Add the garlic and turkey mince, cooking until the turkey is browned and fully cooked.
- Stir in the tomato sauce and cook covered for 2-3 minutes. Add cooked couscous (or rice if preferred),
- Top with Parmigiano Reggiano, parsley (and optional seasonings like Italian herbs, oregano or thyme). Season with salt and pepper to taste, then cook for another 2-3 minutes.
- Spoon the turkey mixture into each prepared bell pepper. Sprinkle a tablespoon of grated cheese over each filled pepper.
- Arrange the stuffed peppers in the air fryer basket in a single layer, ensuring they’re stable. Cook for 12-15 minutes at 180°C, or until the peppers are tender and the cheese is melted and golden.
- Remove the stuffed peppers carefully and garnish with extra parsley if desired. Enjoy warm!
