Vanilla Milk

Ingredients

  • 500–600ml milk (any milk you prefer)
  • 1 tsp vanilla extract or ½ tsp vanilla bean paste (vanilla bean paste will add a richer, more intense flavour)
  • 2 tbsp honey (adjust to taste)
  • 1 cinnamon stick
  • Optional spices: whole cloves or 1-2 lightly crushed cardamom pods

Method

  • In a small saucepan over a medium heat, pour the milk and add the cinnamon stick.
  • Add any optional spices (nutmeg, cloves, and/or cardamom) at this stage so they have time to infuse.
  • Add the vanilla extract (or vanilla bean paste) and honey, stirring until well combined.
  • Heat gently until it’s hot but not boiling.
  • Let the milk warm for an additional 1–2 minutes to allow the flavours to infuse fully, then remove the cinnamon stick and any whole spices.
  • Pour into mugs and to make it extra special, top with whipped cream, a sprinkle of ground cinnamon, or add any other garnish you like.
